Normally, I’m not a fan of eddoe, I prefer potatoes. Fried, stewed, baked, and even in a curry style, I will always opt for potato, hands down. My wife told me about fried eddoe chips, and I decided to give it a try. With its crispy and thin layer, to my surprise, it’s very tasty. Giving me a whole new take on eddoe. Sometimes all it takes it’s just an innovative or rather a creative approach to cooking something and the way its served. Keep your options open, and you never know, you just might find a new favorite!
